Chimichurri Rice
Herby chimichurri rice with fresh green onions on top is a delicious easy side dish to pair with steak, chicken, or fish on a busy night.

Sometimes leftover dishes end up being so delicious you realize they should be first-run dishes next time!
This easy chimichurri rice came together with leftover jasmine rice and a jar of cilantro chimichurri sauce I had sitting in the fridge.
It was so delicious paired with my leftover flank steak strips and roasted cherry tomatoes that I will absolutely be making this on purpose for a family dinner again soon.
Why This is the Best Recipe
Rice makes such a fantastic side dish on a busy night but I think this is the best chimichurri rice recipe because:
- 5 Minutes: Even if you have to cook the white rice from scratch, use an Instant Pot and this is a 5-minute recipe.
- Prepared or Homemade Chimichurri: You can use any chimichurri sauce you love. My homemade version takes 10 minutes or you can us a store bought prepared sauce.
- Richly Flavored: With all those fresh herbs, a dose of red wine vinegar and olive oil, chimichurri sauce adds so much heartiness to a plain bowl of rice.

You only need 3 ingredients for this simple side dish:
- Cooked White Rice
- Chimichurri Sauce
- Green Onions
How to Make Chimichurri Sauce
You can make my homemade cilantro chimichurri sauce in 10 minutes as long as you have a food processor.
You simply mix together fresh cilantro, fresh parsley, garlic, jalapeรฑo, dried oregano, red wine vinegar, olive oil, and salt and pepper to taste.
HOWEVER: If it is a busy night and you don't want to mess with something homemade, you can buy prepared chimichurri sauce at the grocery store.
OR keep this freeze dried herbs packet in your pantry. You simply stir it with warm water to rehydrate the herbs, stir in red wine vinegar and olive oil, and you're ready to go.
How to Make Jasmine Rice
To make this rice side, you can cook your white rice any way you like.

How to Make Chimichurri Rice
Once you have your cooked rice and your chimichurri sauce ready to go, all you have to do is stir them together!
That's it, really. The chimichurri has everything in it you need to give so much flavor to the white rice and the olive oil and red wine vinegar help coat the rice in sauce.
Top with green onions and serve.
Serving Suggestions
I paired chimichurri rice with sliced flank steak that I cooked in my air fryer. I spooned roasted cherry tomatoes on the side.
You could build a similar rice bowl using air fryer chicken or air fryer shrimp and add air fryer green beans or roasted broccoli and carrots.

Chimichurri Rice
Ingredients
- 2 cups jasmine rice
- 2 cups water
- 1/3 cup prepared chimichurri homemade or store bought, see notes
- 3 green onions chopped
Instructions
- Cook the rice using your favorite method. I prefer to use my Instant Pot. Simply add the rice and the water to the Instant Pot, seal the lid. Cook on HIGH pressure for 3 minutes.
- Stir the chimichurri sauce into the rice and serve with the chopped green onions for garnish.
