Bake the cookies according to the package directions and let them cool completely before attempting to decorate them.
Chop the fresh apples into a small dice, no need to peel them first. Place them in a mixing bowl and squeeze the lemon juice over the top. Gently toss with a fork to coat the apples. This will help prevent them from browning.
Spread the frosting in fairly thick layers over the tops of the cookies.
Sprinkle the apples over the frosted cookies and then drizzle a bit of caramel sauce over the top in a pretty pattern. Serve immediately.
