Ingredients
1(12 oz) bag of fresh cranberriesabout 4 cups
3/4cupsugar
3cupsmini marshmallows
4ouncescream cheesesoftened
2cupsheavy cream
1/4teaspoonkosher salt
1cupchopped pecans
1cupred grapeshalved
Instructions
Add the fresh cranberries to the bowl of a food processor and finely chop them by pressing the PULSE button 6 - 8 times.
Scrape the cranberries into a large mixing bowl and stir in the sugar. Add the marshmallows and stir. Cover the bowl and chill for at least 4 hours or up to 24 hours in advance. This lets the sugar soften the cranberry pieces and draws some of the juices out of the fruit to form a delicious syrup.
After the cranberries have chilled, add the cream cheese to a separate mixing bowl. Beat it with a hand mixer until it is smooth and then pour in the heavy cream. Scrape the sides of the bowl and continue to beat with the mixer until the cream is whipped, thickened, and starts to form soft peaks that fall when you pull up the blades of the mixer.
Scrape the whipped cream mixture into the bowl of cranberries and gently fold them together. Do not stir too hard, you want to keep the whipped cream nice and fluffy.
Add the chopped grapes and pecans to the bowl and gently stir them in. Cover the bowl and chill for at least 1 hour before serving.
This sweet fruity side dish can be prepped completely in advance up to 3 days before serving. Just keep it covered in the fridge so that the whipped cream doesn't dry out.
