This fresh and zesty Cuban slaw is made from freshly shredded cabbage and carrots. The secret ingredient is the pickled red onion which adds vinegary bite to the meaty main dish you pair the slaw with. Use it to top a Cuban pulled pork sandwich or as a side dish for your next BBQ.

Ingredients
1/2head of green cabbageshredded into thin strips
1cupshredded carrots
4green onionschopped
1/4cuppickled red onionschopped, jarred or homemade, you can substitute fresh red onion if you prefer
1handful fresh cilantrochopped
2limesjuiced
1tablespoonolive oil
1teaspoongarlic powder
1/4teaspooncumin
Sprinkle of kosher salt and black pepperto taste
Instructions
Thinly slice the cabbage and add it to a large mixing bowl.
Add the shredded carrots, chopped green onions, pickled red peppers, and chopped cilantro to the bowl.
Squeeze the lime juice into a small bowl. Add the olive oil, garlic powder, cumin, and salt and pepper. Whisk together with a fork.
Pour the dressing over the vegetables and toss to coat. Taste and adjust the seasoning as needed. Cover and chill for 30 minutes before serving.
