Fresh strawberry feta salad is sized just right for enjoying for your lunch. It is so easy to scale it up for serving to the family for dinner or bringing to a potluck party on a big platter. Elegant, easy, and so delicious.

Ingredients
5 - 6fresh strawberrieswashed, hulled, and quartered
2cupsfresh salad greensbaby spinach, arugula, or spring mix
Pinchof kosher salt and freshly cracked black pepper
Instructions
Wash and prepare the strawberries.
Add the salad greens of your choice to your salad bowl. Top with the chopped parsley, sliced strawberries, feta crumbles, and chopped walnuts.
Use a fork to strain the pickled red onions from the pickling liquid and sprinkle them over the salad.
Measure 1 tablespoon of the vinegar from the pickled onions jar and place it in a small mixing bowl. Add the olive oil and whisk it together with a fork. Sprinkle the salt and pepper over the vinaigrette and whisk again. Drizzle this over your salad, toss gently, and enjoy immediately.
The salad could be prepped ahead if you just store the elements separately. Only assemble them right before eating to avoid the greens wilting.
